Manual in cassettes. From the end of September to mid-October.

Winemaking
Controlled temperature fermentation and long skin macerations, 20 to 30 days, sometimes with a submerged cap.

Refinement
24-30 months in large Slavonian oak barrels and a few French oak tonneaux. Long refinement in the bottle follows. Formats: bottle (0.75 L), magnum (1.5 L), jeroboam (3 L).

To accompany structured and rich dishes, such as meat, game, stews and mature cheeses.
