The Barolo Riserva Vigna Pajana is obtained from a selection of grapes coming from the south-east side of the property, where the soil evolves with Serralunghesque characteristics". The dehusking is completed with 15% of whole berries, for a fermentation carried out in two stages on a total of 46 days (30 of which with submerged cap).The wine ages in 3,200 liter Slavonian oak and Austrian oak barrels for approximately 40 months.

Vigna Pajana is savory, complex, intense and refined: elegant, juicy and mineral, with balsamic notes that become broader, more intense and rich in nuances as the wine evolves in the glass
