Serraboella is the most famous vineyard south of Neive. A long hill with a west-facing slope that steepens as it grows, slowly sloping south. It is precisely on this steepest and warmest slope that Barbarescos possess a unique character. Power and volume unfold in an elegant blend. In our Barbaresco, two vineyards contribute to this wine. The more mineral and rugged one on the slope bordering Bricco, known to us as the 'd Tourun vineyard, meets the more refined and elegant one from the more protected Schiena d'Ernestin.
FIRST VINTAGE:
The estates from which our Serraboella comes have been vinified individually only since 1999; before that, our Barbaresco was complemented by the Sorì Paitin located between these two vineyards.

TREAKING SYSTEM: Guyot, planted circa 1980-1995
VITICULTURE: Organic, using only natural copper and sulfur compounds. No weed control is practiced, but pruning is done manually or mechanically. Harvesting is exclusively manual.
WINEMAKING: All Nebbiolo grapes are vinified in our cellars using the same philosophy: crushing and destemming, fermentation for 3 to 6 weeks, and maceration in stainless steel with a submerged cap. At the end of winter, the wine is transferred to wood, where it ages for at least 18 months and, when the structure allows, even two full years. The wood is typically barrels with a volume between 25 and 50 hectoliters, made of Slavonian and Austrian oak with an average age of 15 years.
