It is the most classic of Piedmont wines, and the Treiso area is one of the most suitable areas for growing this grape variety. WINEMAKING
Harvest: Hand-picked into crates during the second ten days of September (with possible variations depending on seasonal weather conditions).
Fermentation and maceration:
traditional, temperature-controlled in stainless steel tanks with semi-submerged caps, for approximately 8 days. Primary fermentation is followed by malolactic fermentation, which normally lasts about a month.
Aging:
In steel tanks for approximately six months; bottling takes place in the spring following the harvest.
