The Pasinotti Hill: the story of Nas-cëtta passes through here. We are on the southern slopes of the municipality of Novello, just a few metres outside the Barolo DOCG production area. The calcareous soil and southern exposure make this an ideal location for Nebbiolo, but also for Nas-cëtta. In fact, this is home to the oldest surviving vineyard of our native white grape variety: a small vineyard planted in the 1940s, whose grapes have for many years been blended with those from the Pezzole, Pallaretta, Tarditi and other vineyards in Novello, giving rise to the Nas-cëtta del Comune di Novello produced by Le Strette.
In the Vineyard
Altitude: 350–420 m above sea level
Soil: Calcareous soils with a texture alternating between sand and clay
Grape variety: Nascetta (Nas-cëtta, as we call it in Novello)
Planting density: 4,500–5,000 vines/hectare
Training system: Trellised vines with simple Guyot pruning
Planting years: 1948, 1983, 2009, 2014, 2016
In the Cellar
Crushing and destemming
Cold pre-fermentation maceration followed by gentle pressing
Slow, steady fermentation in stainless steel at 18°C
Ageing on fine fermentation lees for at least 7–9 months, before bottling between early and late summer
In the Glass
Colour: Straw yellow, sometimes with pleasant greenish highlights; good intensity
Aromatic profile: Complex yet delicate, with notes of ripe fruit, flowers, acacia honey, citrus and aromatic herbs. It displays subtle Muscat-like aromas, more pronounced in its youth, reflecting the semi-aromatic nature of the grape variety
Palate: Savoury and persistent, with good freshness, excellent mineral structure and very slight tannins
At the Table
Ideal with cured meats, meat-based appetisers, vegetables and fish, delicate first courses, and fresh cheeses.
