Characteristics

A structured and complex wine that reaches maturity relatively late, around mid-September, which is not particularly typical for this grape variety. The north-facing exposure and the altitude of 400 metres, on a well-ventilated slope, contribute to the wine’s aromatic character and complexity.

Technical Notes

We aim to maintain good leaf cover until harvest in order to protect the grapes from sun exposure and excessive contact with the warm winds that rise from the valley towards the vineyard.

Harvest takes place around mid-September. The grapes undergo brief skin contact at low temperature to enhance the wine’s character and complexity. Fermentation takes place at a low temperature using indigenous yeasts. Following the winter resting period, during which the wine remains on its fermentation lees with repeated pump-overs, it is bottled directly and left to rest for several months before being released onto the market.

Tasting Notes

The wine has a greenish-yellow hue with bright, intense highlights that immediately suggest a rich and full-bodied wine.

The nose reveals aromas of honey, butter, flint, tobacco and tea, accompanied by fruity notes reminiscent of apricot, pear and citrus fruits such as lemon and grapefruit, as well as herbal notes of thyme, sage, nettle and hawthorn.

On the palate, it is structured and savoury, with a pleasant acidity that complements the characteristic minerality of our soils of marine origin.
