Grape Variety
Moscato Bianco di Canelli.
Origin
The vineyards are located on the Moncucco hill in the municipality of Santo Stefano Belbo, at an altitude of 250 to 350 meters, with a southwest exposure and a steep slope. They are the Sorì del Moscato: historic and heroic vineyards.
Soil
Marl and high percentages of fine sand.
Winemaking
The tradition of our territory is in this bottle. Vineyards are over forty years old, planted on loose, steep soils. The grapes are hand-harvested into crates when they reach full phenological ripeness. The fresh grapes are then immediately pressed whole. The must, without refrigeration, is filtered with Dutch bags and fermentation begins immediately at low temperature for about 10 days. Depending on the vintage, when the must reaches 5.5% or 6% alcohol, fermentation is stopped by chilling and left on the fine lees with daily stirring for several months. Afterwards, it is clarified and bottled.
Aging
A few months in stainless steel tanks and at least 6 months after bottling.
Tasting
Straw yellow with greenish highlights. Great freshness and aromaticity on the nose, with notes of sage, green apple, and candied fruit. A pleasant balance on the palate between the sweet and acidic components, which provide length and tension.
Pairings
A sweet white wine with a moderate alcohol content of approximately 6%, it is best enjoyed chilled, paired with dry or fresh pastries. It pairs well with savory dishes as an aperitif or with appetizers featuring green sauces and anchovies, such as tongue al verde.
