Cayega represents the present and the future of Tenuta Carretta: it embodies balance, complexity, structure and drinkability. It is a remarkable expression of the potential of a grape variety that is a symbol of the territory, showcased in a white wine that is perfect for every occasion.
The vineyards from which the grapes are sourced are part of the viticultural amphitheatre surrounding the winery buildings and are planted on typical Roero soils, characterised by sand and limestone.
Winemaking: The grapes are processed whole in the cellar, with gentle pressing in a pneumatic press followed by a 24-hour cold maceration at 10°C. Fermentation takes place at a low temperature (18–20°C), followed by approximately six months of ageing in stainless steel tanks, with the wine kept on its fine lees to enhance its aromatic complexity and fullness on the palate. The ageing process is then completed in the bottle.
Tasting notes: The wine is straw yellow in colour with golden highlights. On the nose, it reveals aromas of ripe pear, white peach, hawthorn blossom and acacia honey, with hints of exotic fruit. On the palate, it is pleasantly rounded, full-bodied and mineral, with acidity that provides freshness and a persistent finish.
Recommended pairings: Served chilled, it makes an excellent aperitif. At the table, it pairs well with appetisers, shellfish and molluscs, raw fish, oysters, and lighter first courses such as pasta and risotto.
Recommended serving temperature: 9–11°C
